Cups to grams by ingredient

A US cup holds about 237 mL, but its weight depends on the ingredient: about 120 g of all-purpose flour, 200 g of granulated sugar or 227 g of butter.

Why there is no single cups-to-grams number

A cup measures volume; grams measure weight. Dense ingredients such as honey weigh far more per cup than light ones such as cocoa powder, and how an ingredient is packed or levelled also changes the weight. That is why recipes that give weights are more reliable than those that give cups.
